Workout: This week’s workouts were the same as last weeks. Weeks 1 and 2 are meant to build a foundation for the more difficult weeks to come. Since I am already pretty fit, I don’t necessarily feel like I need to start off slow. I think I probably could have skipped Week 2 and gone straight to Week 3 or maybe halfway through Week 2, started Week 3. In any event, the workouts are still good and I added in the more advanced options Jillian provides and this helped me up the burn! I am noticing flatter abs and more toned arms. I’m looking forward to changing up the workout with Weeks 3 & 4!
Food: Food is still great! Although I was pretty excited about a Thai dish included in the recipes, it didn’t come out so great. Just didn’t really taste as good as I wanted it to. But, I did make a delicious stir fry this week that I thought I would share with you!
Beef Stir-Fry with Broccoli and Shiitake Mushrooms*
1 bunch of broccoli
1/2 lb sirloin steak (I buy “stir fry beef” meaning it has already been sliced into thin stir fry slices- this saves some time)
1 bunch of thinly sliced scallions
1 clove of minced garlic
1/2 TBSP ginger spice
1/4 TSP crushed red pepper
1 pint of shiitake mushrooms
Brown rice (I use Uncle Ben’s 90 second rice-cooks in the microwave and is so easy!)
The recipe calls for a homemade sauce consisting of the juice of 1 orange, the juice of 1 lime, 1 TSP soy sauce or tamari, and 1 TSP sesame oil. I forgot to buy the citrus so I just used a bottle of sauce I had on-hand. These sauces generally work great as long as you ensure that there is no added fat or oil and the sodium is not too high. If you need to save some time, give bottled sauce a try.
1.) Prepare a bowl of ice water. Cut the broccoli into florets and place in a microwave-safe dish. Cover and microwave on high for 2 to 3 minutes. Broccoli should be softened but still crunchy. Immediately dunk the broccoli into the ice water to stop the cooking.
2.) If you are preparing the sauce yourself, mix it together in a bowl, whisking the ingredients.
3.) Heat a large skillet with EVOO. Add scallions and cook about 30 seconds to soften. Add the garlic, ginger and red pepper flakes. Cook for another 30 seconds. Add the beef and cook until no longer pink. Add the broccoli cooking for one minute before adding the mushrooms and cooking for an additional 2 minutes.
4.) Add your prepared or bottled sauce to the skillet. Toss to combine. Serve the stir fry over the brown rice.
