Hello there! I hope you are gearing up for a good NYE! If you are looking to make something healthy to counteract all those holiday indulgences, try this great addition to the Sunday Slow Cooker Series, Tuscan Chicken Soup. It is to die for yet totally healthy!
Tuscan Chicken Soup
Makes 4 Servings
Ingredients:
1 chopped onion
2 tablespoons tomato paste
Dash of black pepper and salt
1 can of cannellini beans, rinsed and drained
1 can of fat free, low sodium chicken broth
1 bottle of roasted red peppers, drained and chopped into pieces
1 lb boneless, skinless chicken breast, cut into 1 inch pieces
3 garlic cloves, minced
1/2 teaspoon fresh or dried rosemary
1 package fresh baby spinach
8 teaspoons grated parmesan cheese
Directions:
1. Combine ingredients 1 through 9 in the slow cooker. Cook on high for one hour. Set the slow cooker to low and cook for another three hours. After three hours, add in rosemary and spinach, allow to cook for another 10 minutes.
2. Ladle soup into bowl, top with parmesan cheese and enjoy!
This recipe is so incredibly easy. The prep is so minimal and you just basically throw everything into the cooker and go. If you want to try this on a work day (I mean what is better than coming home to dinner already made), try purchasing pre-chopped onion and pre-minced garlic or do the chopping the night before. That way, all you have to do is throw everything into the cooker in the morning and press go. Rather than cooking on high for one hour and switching to low for another three, just cook on low for 5-6 hours and let warm after that!
