Sunday Slow Cooker: Pulled Chicken Sandwich

Happy Super Bowl Sunday! ¬†Hope you are watching the game and eating some good food ! ūüôā ¬†I always love trying out healthy switches for my favorite comfort foods. ¬†This Slow Cooker Sunday recipe is a great swap for the traditional pulled pork sandwich. ¬†Its made from boneless, skinless chicken breasts which are low in fat. ¬†The slow cooker keeps ’em nice and juicy, not all all dry. ¬†They literally fall apart when you take them out. ¬†Mouthwatering. ¬†This is a must try recipe!!

Pulled Chicken Sandwich 

Adopted from Cooking Light

Ingredients

1 yellow onion

3-4 breasts of chicken

1 cup of ketchup

2 tablespoons of apple cider

2 tablespoons of molasses

1 tablespoon Dijon mustard

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon of hot sauce

whole wheat hamburger buns

Directions

1.)  Place chopped onion in slow cooker.  Top onions with full chicken breasts.  Combine remaining ingredients except for hamburger buns and pour over chicken.

2.)  Cook on low for 4 hours.  When chicken is done, shred it using two forks and combine with sauce.  Place chicken on a bun.  Serve with sweet potato fries (baked not fried!).  Enjoy!
