I’m always on the hunt for new healthy recipes. I love trying out new creations in the kitchen so I was really excited to try out Ellie Krieger’s So Easy cookbook. Ellie is a world-renowed registered dietician with her own Food Network show. So the girl knows who to make things that will not only taste good but will make you feel good.
So Easy is split into eight sections: Breakfast At the Ready, Breakfast At Leisure, Lunch To Go, Lunch At Home, Dinner Rush Hour, Dinner Kickin’ Back, Desserts In a Flash, Desserts Extra Special. I love this! I find that making healthy meals during the week can be so hard or uninspiring. I love that Ellie has options for all three meals for both when you have time and when you don’t. My only criticism is that some of the on-the-go meals can still be a little involved but if you plan ahead, meal prep the night before and cut out some of the steps (e.g., I don’t need toasted walnuts, plain are fine thankyouverymuch), you can still make those more involved meals work.
The food is delicious! I’m slowly working my way through the recipes but so far I’m loving what I have been making. While the food is definitely healthy, everything tastes great. Ellie does a great job making some of my favorite recipes into a healthier version. Like this amazing Cobb salad I made for lunch. Totally yummy and healthy!
The cookbook also includes all necessary health information-just to prove that you are actually eating healthy, the food is so good you may forget. Each recipe includes the serving size (Very Important!) and the nutritional information per serving such as calories, fat, saturated fat, protein, sodium, etc. Ellie also provides you with the vitamins and minerals contained in the dish so you know if you are getting enough fiber, Vitamin B, etc. She takes all the guesswork out of healthy eating.
Ellie also provides a ton of other useful tips throughout the cookbook on things like the healthiest way to cook chicken, storing eggs, ways to make your lunch sandwich more exciting and ways to cut down prep time from the produce aisle. She also provides you with a list of things you should have on hand in your pantry so you have all the staples to make these healthy meals. Take my word for it, this woman knows what she is talking about!
And if all of this wasn’t enough to convince you this is a great cookbook, the photos are gorgeous! The food looks incredibly appetizing and mouthwatering. Its really well done and not too expensive. If you are looking for a great healthy eating cookbook, give Ellie Krieger’s So Easy a try. You won’t be disappointed. Bon appetit!
