Florida Keys Part 2
Yesterday I told you all about my trip to the Florida Keys for the big 30 Under 30 conclusion.  Well, today I’m going to give you a little bit more of the juicy info on all the great activities we did!

We flew out really early on Saturday morning which allowed us to get in a full day on Saturday.  It was nice and warm, in the upper 70s, when we we arrived.  Unfortunately there was a bit of an overcast so it was not super sunny.  No matter, we took to the ocean and immediately demanded that a double kayak be presented to us- to which the hotel happily obliged.

We stayed at the Hilton Key Largo and we had the most amazing view from our room!  The hotel is all open air with both a pool and an awesome waterfront location on the Gulf of Mexico.  The staff there are super friendly and multiple staff members wished me a Happy Birthday (apparently the hubs got the word out).  I even got a turtle good luck charm as a bday gift!

We took our kayak out to the mongroves (which I lovingly called mangoes because I had not heard of this word “mangroves” before and could not understand the hubs Australianisms).  They were way off shore- I think about 2 miles round trip.  We certainly got our workout in and were happy to dive into the Gulf after our excursion to cool off.

Luckily the overcast skies cleared up just in time for us to experience the gorgeous Florida Keys sunset over cocktails.  Amazing!  The key lime mojito at the Hilton didn’t hurt either!

If you’ve ever been to the Keys, you know that it has a pretty casual vibe.  It’s very beachy and a “go-with-the-flow” kinda place.  So we set out for a casual dinner at Snappers.  It was located on the Atlantic side of Key Largo and featured an open deck with a bar lit by neon lights.  While my fellow New Yorkers may be cringing at the thought, it was actually kind of amazing. Pete and I settled in for what turned out to be a culinary delight!  It started out with Gator Bites- apparently these little nuggest are made from alligator meat and cooked in a buffalo chicken style.  I was not at all having this.  We had already snacked on some shrimp at the Hilton and I was not really up for alligator (ew gross!).  But the hubs practically force fed me one and I have to say, it tasted like chicken.  For the main, Pete had, and I quote, “the best lobster I have ever had.”  Big call but it was some pretty good lobster. I had this really awesome Thai-inspired fish dish complete with coconut rice and pineapple slices (I die!).  And of course, any good meal in the Keys is not complete without some Key Lime pie.

I already gave you the run down on the big day, so I’ll give you an overview of our Monday morning (thank you Mr. President for sharing a bday with me!).  The weather bounced back a bit and we had some sun without too much wind so Pete and I played a round of tennis and then hit the pool and then the beach.  I can’t even begin to tell you how nice it is to have the sun shining on you when your limbs haven’t seen sun or fresh air for months!  Oh the glory.

The Hilton has a ton of great watersports and we had been wanting to try out a bunch all weekend but the weather had made it a bit difficult (the winds were too strong for most activities) but luckily they opened up on Monday so Pete and I headed out on some Stand Up Paddle Boards.  If you’ve never tried it before you absolutely must do it NOW!  It is so much fun and the best core workout ever!  We paddled all along the shore line checking out the large Gulf houses.  So cool! When we finally arrive back on land, we had just enough time to enjoy one more margarita and fish sandwich on the beach before heading back to Miami to catch our flight.

Overall it was such an awesome trip and the best way to turn 30!  I wish I could go back right now and sink my toes into the fine, soft sand.

    Best lobster he has ever had??
    Alright, I guess I am going to have to work a little harder on my specialty – lobster dinners. I will not settle for 2nd best.
