Hello all! It’s been quite awhile since I posted a recipe for you so I thought I would post tonight’s dinner. I love this recipe because its so quick and easy to make. If you struggle to fit fitness and health into your busy lifestyle, then this recipe is for you!
Tilapia with Pico De Gallo
1 tilapia fillet per person
1-2 large tomatoes, diced
1 red onion, diced
1 jalapeno, diced
1 clove of garlic, minced
1 tablespoon EVOO
juice of 1 lime
pinch of chili powder
salt & pepper to taste
1. Coat a skillet with non-stick spray. Place tilapia fillets in skillet and sprinkle with chili powder, salt and pepper. Cook 4 minutes per side.
2. Meanwhile, combine diced tomato, onion and jalapeno in a bowl. Add in EVOO, salt, garlic. and lime juice. Stir to combine.
3. When fish is done, plate and top with pico de gallo. Enjoy!
I told you it was so easy. I actually ran out of EVOO tonight so I had to use the jalapeno olive oil we got from St. Helena Olive Oil Co. in Napa Valley. I actually only used the smallest amount because the jalapeno olive oil is like liquid gold around my house and is best used for dipping. Although it was super delicious in this recipe!
