Essentials of Italian Cooking

Happy weekend all!  Hope you are having a good one!  It was supposed to be much warmer here this weekend but in my opinion it was still pretty darn cold.  I’m so looking forward to some real spring weather when I can shed my winter coat and enjoy some warm sunshine.  I sprung for some flowers this weekend to spruce things up a bit!

This weekend the hubs is home from Mexico again.  Yay!!!!  I decided to make my second recipe from the Essentials of Italian Cooking to stay with my plan of working my way through the cookbook and learning more about Italian cooking.

This weekend the menu consisted of Penne tossed with Tomato Sauce with Porcini Mushrooms, Pan-Roasted Chicken with Rosemary, Garlic and White Wine, and Sauteed Broccoli with Garlic and Olive Oil.

Compared to the meal I made last week, this was actually much easier and involved some downtown even.

We topped the dinner off with a little bit of homemade store-bought sorbet.  Blood orange.  Delicious!
