Are you celebrating Cinco De Mayo today? I love Mexican food as much as the next person, but often the cheese, sour cream and more can add up to a lot of unwanted calories. I’ve got a great Cinco De Mayo recipe for you that is both satisfying and completely healthy! You’ll never have to worry about unhealthy Mexican again! Plus, since the hubs had to fly back to Mexico today, this recipe serves one (although you can increase the ingredients to make it for two or more people). I always hate how most recipes are for 4 because I always feel like it’s so hard to adapt but this one is for a single!

Spicy Shrimp Tacos with Mango Pico de Gallo
Ingredients
1/4 lb shrimp
1 tsp chipotle chili powder
1 mango, diced
2 Roma tomatoes, diced
1/4 red onion, diced
Several sprigs of cilantro, chopped
1 small clove of garlic, minced
1 lime
1 teaspoon of olive oil
2 tortillas
Directions
1.) Spray grill pan with non-stick spray and heat over medium heat. Season shrimp with chipotle chili powder. Add shrimp to plan and cook until no longer translucent (about 3 minutes per side).
2.) While shrimp is cooking, combine tomatoes, mango, red onion, cilantro and garlic in a bowl. Stir in cilantro, olive oil and lemon juice. Season with salt. Mix together.
3.) When the shrimp is done, remove from pan and place on tortillas. Top with pico de gallo mixture. Enjoy!
And don’t forget to keep your drinks low cal so you don’t pile on the pounds through drinking. I’m a big fan of Skinnygirl Margaritas. Add a dash of lime for your own twist!
They were really tasty! I like mine spicy so I added chiptole chili powder to the shrimp & jalapeno to the salsa but if you don’t like spicy food, you can leave those ingredients out.
