Celebrating Dad

Hey there!  Happy Father’s Day to all those Dad’s out there, especially to my Dad!

Today is also my Dad’s birthday!  So Happy Birthday Dad!!

We had a birthday/father’s day weekend extravaganza!  The Hubs flew in from Mexico and we hit the road to the Cape for a weekend of fun.  Not only did I get to spend some quality time with my Dad, I knocked a couple of things off my 99 Days of Summer list, starting with some quintessential New England lobster rolls on the back porch.  Yum!

After lunch we headed to the beach for an absolute perfect day.  We rented some stand-up paddleboards.  I honestly think this might be one of my all time favorite water sports.  It’s really fun and not that difficult to get the hang of, plus it’s great exercise.

A paddleboard creates an unstable surface when it is in the water so when you are standing on it you have engage the muscles in your core and your legs to keep yourself balanced plus you engage your upper body muscles including your shoulders, arms and upper back muscles when you paddle.  It’s a total body workout and you burn some serious calories paddling around.  Add in some wind resistance and waves and you’ve got a serious workout on your hands!  The best part is you hardly feel like you are working out because it’s so much fun!

Of course if you really want to up the ante you can do some yoga on your board.  I did this locust pose for Athleta’s Instagram challenge.  I also tried a boat pose, which had my core shaking immediately!

Saturday night we headed back out onto the porch for a delicious meal of steak with peach salsa and pepper crusted pork with strawberry-balsamic sauce.  Scroll to the end of the post for the recipe.

Today we headed out on the paddleboards again and it was a good thing because I absolutely devoured the brunch my mom put together for Father’s Day/my Dad’s Birthday.  Check it out.

Pepper Crusted Pork with Strawberry Balsamic Sauce

Pork

 

(Adopted from Coastal Living)

Serves 4

Ingredients

1 pork tenderloin

2 teaspoons of fresh rosemary or thyme

salt and pepper to taste

2 tablespoons of light butter

1 shallot or 1/4 red onion, minced

1/2 cup of beef broth

1/4 champagne vinegar

2 tablespoons light brown sugar

8 oz of strawberries, chopped

Directions

1.) Pre-heat grill.  Sprinkle pork with salt, pepper and fresh herbs.  Grill pork, turning for 15-20 minutes or until done.

2.) While pork is cooking, heat skillet over medium heat.  Melt butter in skillet.

3.) Add shallots and cook for 2 minutes.  Stir in beef broth, vinegar and sugar.  Bring mixture to a boil and cook for 1 to 2 minutes or until sugar has dissolved.  Add in strawberries and cook 3-5 minutes until berries are soft.  Spoon sauce over pork and serve.  Enjoy!
