Delicious Summer Recipes Plus a Giveaway! (Closed)

Happy Blogiversary Week! I’ve got a great giveaway for you guys today and I can’t wait to share it with you! Please read on!
One assumption people make when they hear that I’m a healthy living blogger is that I must eat kale three times a day and snack on air crackers. Well, I do like kale but I also love to eat! Truly I do. I would not have the energy to do half of the activities I do if I did not fill myself with healthy, nutrient rich food. But if you know me at all, you also know I love to indulge. I try to strike a balance (hence the name My Own Balance) and I do this by eating good foods most of the time, splurging sometimes and finding substitutes for the things I love! Recently I’ve been making some really great recipes and I wanted to share them with you.
First up, every day last week I brought this amazing summer salad with me for lunch. It was so delicious and packed with nutrient rich fruits and veggies. Not only was it good for me but every bite was like a little slice of summer packed onto my fork. Check out the recipe!
One of my favorite sayings, guacamole can actually be good for you because avocados are full of what is called “good fat”, which helps you absorb nutrients contained in fruits and veggies, like in the salad above. The problem with guacamole comes in when you add things like mayo or cream to get that creamy texture. I recommend using very ripe avocados to achieve that creamy texture and leaving the additives out.
I make a lot of salads and salsas to accompany my proteins because they are so fresh and healthy. This Tomato and Corn Salad I made with the bounties of our trip the farm stand in North Fork. I added some jalapeno olive oil for a little spice!
Another salad I’ve been enjoying this summer is a fresh watermelon and feta salad. It just screams summer and it’s perfect when you need something to bring to bbqs!
It’s no secret that I love a good cocktail as much as the next girl and I’m a huge fan of Skinnygirl cocktails because they offer a low calorie alternative to some of my favorite cocktails. I whipped up this cocktail recently after seeing it on the Skinnygirl website!

A summer favorite of mine is fish cooked in a parchment packet (a fairly well-know method). Simply take a piece of your favorite fish put it in parchment paper with some seasonal veggies, lemon and garlic then pop into the oven! Easy, no mess, and only takes about 15-20 minutes. Super healthy too! Your tomato and corn salad would make a great topper for fish prepared this way. Yummmmm…
I wish I was creative enough to make up my own healthy versions of my favorite unhealthy dishes! Right now, my favorite healthy cooking meals are Emily Bites dinner cupcakes. The taco ones are my husband’s current fave! Good luck with your first giveaway 🙂

I like to make both healthy and unhealthy recipes, haha! I most recently made a salsa verde that came out really well 🙂 And i’m thinking about purchasing a spiralizer to start making zucchini spaghetti!
I love eating chickpea salad right after a work out! After eating it I always feel full and energized.
Chickpea Salad: In a large mixing bowl combine 1- 14oz. can of Chickpeas, 1/2 of a red apple (diced), 1/2 of a small red onion & 1 can of drained tuna fish in water. Pour in 1 table spoon of apple cider vinegar and 1 teaspoon of olive oil. Add salt & pepper to taste, stir the ingredients together and serve chilled.
These all look amazingly refreshing- that tomato and corn salad looks especially delicious! and i’m going to have to try that guac recipe! i used to make it with mayo, but then i found a barefoot contessa recipe that was just straight up avocado and it was delicious, but i love the addition of mango and jalapeno!! i might throw in a little cilantro (because i am obsessed with cilantro, and want it in everything) and call it a meal 🙂
Those salads look so good! I will definitely be trying them before fall comes! I love grilled veggies and fruit in the summer. My husband and I make kabobs all the time in the summer because there are so many different options and we can each make our own with what we like.

I am excited to take classes with Brittany in person this summer! I have followed Brittany online for some time. I particularly like the Barre and Pilates workout videos. Her workout techniques reflect current thinking and best practices. She supports all levels of fitness. Definitely worth a try!
Brittany is the BEST. She is inspirational, motivational and innovative. No two classes are ever the same. I'm sad when the summer classes end, but I'm looking forward to checking out her online classes this fall and winter.
My wife and I decided to give Balance Barre Fitness a try and we were not disappointed. We thought the classes would be pretty easy but were surprised at how rigorous they were. The class was great for working on our coordination and core strength. I don't get to many ...
