Labor Day Recipes: A Healthy Asian Feast!

Hi all!  Well, with only two days to go before the last long weekend of the summer, I have a ton of fun ideas for you!  I have been cooking up a storm and I wanted to share some recipes with you in case you were planning on hosting friends or just generally looking for some good eats!  So expect today and tomorrow’s post to be all about the food (see this is what happens when you can no longer do pushups and burpees and such… you eat!).

I am a huge fan of Asian-inspired dishes.  My absolute favorite is Southeast Asian and it’s no wonder because it contains so many flavors that I adore like coconut, lemongrass, chili and it always comes across light rather than heavy.  This meal is perfect for those last few days of summer!  I adapted the recipes from Coastal Living for your eating and drooling pleasure!

Ingredients
  1. 1/2 cup dried instant rolled cooking oats
  2. 1/2 cup of unsweetened almond milk
  3. 1 tbsp chia seeds
  4. 1/2 tbsp almond butter
  5. 1 tbsp cacao nibs
  6. 1/3 cup of raspberries
Instructions
  1. Place all ingredients in a glass jar or cup and mix well.
  2. Refrigerate the oats overnight. In the morning, stir oats and
  3. either heat in the microwave for 45 seconds or eat cold and
  4. enjoy

Ingredients
  1. 1 head of butter lettuce,
  2. leaves separated
  3. 1/2 pound of ground
  4. chicken
  5. 2 tbsp of fish sauce
  6. sriracha to taste (more if
  7. you like it spicy!)
  8. 1 scallion, chopped
  9. 1 mango, cubed
  10. 1 red Thai chile, sliced
  11. 1 tbsp of mint, chopped
  12. 1 tbsp of basil, chopped
Instructions
  1. Spray a skillet with non-stick cooking spray and add ground
  2. chicken to pan. Add fish sauce and sriracha. Use a spatula to
  3. break chicken up and coat it with sauce. Cook chicken until
  4. done. Place one lettuce wrap on a plate and add chicken to
  5. the wrap. Top with mango, scallion, chile, mint and bail. Wrap,
  6. serve and enjoy

And of course, none of this would be any good if we didn’t have a nice cocktail to round out the meal!  I made this Summer Sangria in a large pitcher with a lot of fresh fruit, Oyster Bay Sauvignon Blanc (a fav) and Skinnygirl Tangerine Vodka.  You could use any sauv blanc and any citrus or fruity-flavored vodka.  The original recipe also called for a twist on a simple syrup.  I’m lazy so I didn’t feel like making it.  As a result, the vodka added a bite.  If you like your drinks sweeter, I suggest mixing a simple syrup to add in.

Ingredients
  1. 4 filets of white fish like
  2. tilapia
  3. 1 tbsp of chile powder
  4. 1 tsp of olive oil
  5. 8 corn tortillas
  6. 1 pint of cherry tomatoes,
  7. quartered
  8. 1/2 red onion, chopped
  9. 1/2 pineapple, cubed
  10. 1/2 jalapeno, deseeded
  11. and chopped
  12. 1 lime, juiced
  13. salt to taste
Instructions
  1. Rub fish with olive oil and chile powder and set aside on a
  2. plate. Prepare salsa by combining the tomatoes, onions,
  3. jalapeno, pineapple and lime juice in a bowl. Add salt to taste.
  4. Heat a grill pan that has been sprayed with cooking spray over
  5. medium-high heat. Add fish to pan and cook until fish is flaky
  6. and done, about 8 minutes.
  7. Serve fish in tortillas topped with pineapple salsa and enjoy!
  8. Note--If you prefer chicken or tofu, you could make this same
  9. recipe substituting chicken or tofu for fish.

    These recipes look delicious! I’ve never made spring rolls but might have to give it a try – rolling all the ingredients into a little wrapper looks tricky.

    My favorite cuisine is Mexican – I could eat it every day and never get sick of it!

    Are you available for hire? Seriously everything looks incredible!!! Favourite cuisine is a toss up between japanese and mexican. We don’t have great mexican restaurants in Toronto though so maybe Japanese for the win!
