Hi everyone! I’m Nicole, the blogger behind Foodie Loves Fitness, and I’m excited to be guest posting on My Own Balance today. Brittany and I have a lot of common interests, including our loves for exercise, food and wine.
Being that the holiday season is all about spending time with the people you love and celebrating family traditions, I thought it’d be fitting to share with you all a recipe that reminds me a lot of family – particularly my grandma.
Growing up, I had a lot of sleepovers at my grandma’s house, and one of the best parts of these outings was the special breakfasts she made. The two most popular breakfasts of hers with my siblings, cousins, and me was her chocolate chip pancakes with homemade syrup and apple dapple pancakes. As a girl with a sweet tooth, I’ve always loved treating myself to a breakfast dish that can very well double as dessert.
A perfect dish for a special occasion or weekend morning, apple dapple pancakes make for a bit of a fancy breakfast and can feed the whole family, yet the recipe is pretty easy to throw together. I “healthify” the recipe a little by using whole wheat flour instead of white, low-fat milk, subbing honey for white sugar, and using light butter to make it more waistline friendly. I also use more cinnamon because I love cinnamon on pretty much anything, especially baked apples.
Apple Dapple Pancakes
3 apples, peeled & thinly sliced (any kind that bakes well will work)
1 ½ cups of low-fat milk
1 cup whole wheat flour
¼ lb light butter
3 TBSP honey
1 TSP vanilla extract
¼ cup light brown sugar
½ TSP salt
1 TSP cinnamon
Confectionary sugar for sprinkling, optional
In a large bowl, beat the eggs, milk, flour, honey, vanilla extract, salt and cinnamon until well combined.
Preheat oven to 425 degrees. Place butter in a 13×9 pan, then place in the oven and allow the butter to melt. Add sliced apples to the pan after butter melts. Let it cook for about 8 minutes, or until butter is sizzling. Don’t allow it to brown.
Remove from oven, then pour the batter over the apples. Sprinkle with brown sugar. Bake for 20 minutes, or until lightly browned.
Optional: Shake confectionary sugar on top.
Allow to slightly cool, then cut into 8 slices. Serve immediately.
