Friday’s Food & Fitness: The Valentine’s Day Edition

Hello and Happy Valentine’s Day! Hope you have something special planned for today whether it be with a significant other, your besties or yourself! Welcome to Friday’s Food & Fitness: Valentine’s Day Edition!
I don’t have any awesome chocolate recipes for you today BUT I did bake this week. Cue Rocky music, angels singing and a multitude of other things because I said BAKE people! If you know me then you know I don’t bake! In fact, at the Cook & Go event I went to, our chef pointed out that baking is very scientific unlike cooking where you can fudge the lines a bit. I am really not that great at science, which is why I became a lawyer, not a doctor!
Anyway, all that being said…I baked for Davida’s healthy Bake Off this week! You can head on over to her blog and check out the link-up with everyone else’s creations and check out her healthy creations she has been posting all week.
So when to participate in the link-up, I did not know what to make at first. I racked my brain for a great recipe that I could transform into a healthy creation. Then I remembered my mother’s nissu bread. My blonde hair, you see, doesn’t come from a bottle but from an ancestry rooted in Scandinavia. My father’s side of the family is from Sweden and my mother’s is from Finland. Growing up my mother made nissu bread, a Finnish recipe that her mother used to make.
I have never made nissu bread before but since I was breaking out the hot pink stand mixer, I figured I would give it a go!
It didn’t come out too bad! I was actually pretty impressed. My mom’s tastes a lot more like cardamom than mine did but that was probably just the recipe I used. Here is my Healthier Version of Finnish Nissu Bread recipe for your pleasure!
I have tried out so many new fitness classes these past few days so expect a bunch of recaps coming soon! I also did two of my old favorites: Chaise 23 and Physique 57!
Chaise 23 just opened on the UES near my apartment so I was super psyched to try out their new studio! Great workout as always!
Physique 57 has another new online video called Physique Cardio. This one was tough! My thighs were so sore the next day!
SAPPY VDAY STUFF
When I got home from work last Friday, the Hubs had a beautiful bouquet of flowers waiting for me. He wanted me to be able to enjoy them all week! He’s the best!
I got him a new wallet for Valentine’s Day this year because he really really needed one!
Oh and did I mention I’m not really “here” today? That’s right! I’m in Vieques, Puerto Rico for the weekend because Monday is also my birthday! Woo hoo! Catch you on the flip side!

Hi Britt and Happy Birthday.. I give you big points for making Nisu for the first time. Good for you. Next time you make it, get whole cardamom seeds and grind them yourself. You’ll notice a HUGH difference in the taste of the nisu. The pre-ground cardamom just doesn’t taste very good..or cardomom-y (if there is such a word). Think Spring !!!!!!
For someone who doesn’t bake, it looks like you mastered doing the weaving (not sure what else to call it haha) on this bread pretty well! Nice job woman. Happy Valentine’s Day and early birthday!! Hope that you have an a amazing weekend getaway! 🙂
Beautiful flowers and so fun to be in Puerto Rico!!! Dan and I are going to Lola in downtown Cleveland Saturday night, but for tonight we’re making dinner in and drinking champagne and I made chocolate covered strawberries!

Happy early birthday! Hope you’re having an awesome time in Puerto Rico! I didn’t know you were Swedish/Finnish… my background is pretty basic (Irish/Scottish?) like almost everyone from Atlantic Canada haha so I am always intrigued to meet people with different backgrounds!
