Hello my friends! What a crazy week this has been! Sixty degrees one day and then twenty degrees another. Get it straight Mother Nature! Plus, a plane has gone missing and there was a huge building explosion in Harlem. I never know what to expect anymore when I turn on the news in the morning.
Anywho, welcome to this week’s Food & Fitness!
I was grocery shopping recently and I saw this jar of coconut oil and decided I needed to buy it immediately! Nevermind the fact that I had no idea what to do with it. I happily paid for my purchase and skipped on home only to place the jar in the pantry and forget about it. Recently, I saw the jar while digging through my pantry and decided, I had enough of letting sit on the shelf. It was time to get creative and start using it.
I decided to start out simple with a Thai curry. I figured it is already made with coconut milk so I couldn’t go wrong.
It actually came out really delicious! The coconut oil didn’t have an overwhelming taste to it but it sure smelled good cooking!
Over the weekend the Hubs and I visited Urban Rustic in Brooklyn for an awesome 8:30am breakfast. We had a tennis court reserved at 7am Saturday morning because we are crazy and we wanted to grab a bite after our match. They had an amazing juice bar.
I got the healthy egg scramble and boy was it goooood! Lots of sriracha!
So many great things in fitness this week! Of course I’ve been having fun with my online workouts!

HA that sounds like me with coconut oil. I buy it…forget about it for a month….then rediscover it and am like OH yeahhhhhh and decide to use it. My favorite workout of the week has been going on walks on the warmer days. Just being outside was so nice two days this week and I think it’s supposed to warm up today and tomorrow! Have a great weekend ๐

Favorite workout this week was Insanity. I haven’t busted that DVD out in a while and it hurt so good! YES, love the coconut oil – do your hair next – or oil pulling! I’m off to Cleveland in 4 hours to see Dan and spend SPD/our 1 year anniversary over the next 4 days!

My favorite workout was my run. Difficult to get one in during the week but as the days are getting longer, I got to run this evening before it got dark. Yeah. also recently bought Jillian Michaels DVD and am really liking it. I get up early to do it to be sure I get some exercise in. Longer days = way more energy than usual.
Maybe we’ll have to check out Brooklyn Rustic when I come to town! I hope we get the chance to hang out or do some fitness together again.
Oh, the coconut oil. I hate coconut so much. I have RD guilt that I hate it so much but I do. I may try cooking with it one day just to give it a shot but there’s a part of me that just doesn’t want to do it. Especially after reading Carla Birnberg’s oil pulling post about how it felt like mayo (which I detest as well). Even writing “mayo” and thinking about its consistency is turning my stomach now.
I started using coconut oil last year. I don’t love coconut flavor, but I honestly love this oil! I put it in a lot of my low calorie muffins. I just made a batch of chocolate banana bread and used it for the drizzle on top. It’s a mild, yet delicious flavor. I hadn’t thought about adding it to my dinner dishes yet. That is a must try.
I have cooked with coconut oil and agree that it smells totally amazing. However, if you don’t pair it with the right food you’ll think you don’t like it. I think you have to be careful how you use it.
I had a great online workout with my trainer on Saturday. Awesome!
