Hey all! First Friday of September done and dusted. I’m still loving this weather! Welcome to this week’s edition of Friday’s Food & Fitness!
I’m sad that my grilling days are officially over. We spent our last weekend on Cape Cod for the season over Labor Day. We are going away next week on our official babymoon and by the time we get back, it’s going to be baby crunch time. We did a good send off though with this epic dinner:
Grilled artichokes with olive oil and salt.
Grilled kale. They’re basically kale chips on the grill but they are so crunchy and yummy!
Grilled rosemary-apricot chicken. Sound fancy but seriously it’s so easy. The marinade is just apricot preserves, fresh rosemary and white wine vinegar heated for one minute in the microwave and then brushed over the chicken before grilling.
This couscous salad was amazing! I just added some cherry tomatoes, chopped dates, sliced dried apricots and sliced almonds. It was slightly sweet but also kind of savory. Great combo!

Pumpkin mania is beginning already! Also the limited batch Chobanis are such a great marketing strategy. Gets me every time.

3.) Try some yoga at home. This is one of my favorite ways to practice yoga. I love MyYogaWorks and YogaGlo. Both are incredibly reasonably priced per month and have a huge collection of classes with different instructors in all different styles.

September 5, 2014The cous cous looks great and you have given me an idea for kale chips…I guess when it comes down to it you can put anything on the grill! 🙂 I need to do more yoga. I have been doing some poses nightly to loosen up my hips … baby steps!!
