I had two major food highlights this week! The first were this amazing stuffed eggplants. I got the recipe from Skinnytaste.
I used chicken sausage for these peppers and while I really like chicken sausage, I don’t think I chose the best flavor. I got peppers in mine and I wish I had just had plain because they added a little Latin or Mexican flavor.
These chicken panini sandwiches from Iowa Girl Eats were amazing!
Plus they were so easy to make! Just grilled chicken, grilled eggplant, marinara sauce, fresh mozzarella and fresh basil. Delish!

September 26, 2014I’m always seeing awesome inspirational quotes from Lorna Jane! I follow them on social media and they sent me this cute journal that’s packed full of motivational sayings.
I LOVE eggplant but I developed an allergy to it in my adulthood 🙁 Sometimes I want to try it again to see what happens (with a Benadryl close by!) because I ate eggplant parmesan all the time growing up – It was my fav!
