Hi there!  Happy Halloween!  What are your scary plans for today?  I’m going to try to stay out of the way of mayhem!  Welcome to this week’s edition of Friday’s Food & Fitness!






Even though I’ve been feeling a bit tired I’ve been keeping up with my meals.  I figure now’s not the time to get lazy since we will be relying on frozen meals and takeout soon enough!  I made another one of Pete’s favorite foods from his pre-baby request list: Slowcooker Pork Tacos.

These were a huge hit!  Over the weekend we headed down to the West Village and visited the Sullivan Street Spice Shop.  I went here on my food tour and vowed that I would come back.

In addition to picking up some coconut rooibos tea, I also grabbed two vials (yes they come in vials) of ancho chili powder and jalapeno chili powder.  Those along with some chipotle chilis in adobo gave the pork tacos quite a kick.  I love the idea of being able to turn on the slowcooker, walk away and when you come back, BAM, dinner is served.  So simple.  For more slowcooker recipes, check out my recipe page!

I served these two ways: one with regular salsa, Greek yogurt (my secret substitute for sour cream), cheddar cheese, chopped tomato and guacamole.  The other with diced mango, mango and peach salsa, guacamole and cheese.  So so good.

While in the West Village, we also hit up Rafettos, another stop on my food tour.  This place makes amazing fresh pasta.  We tried the lemon red pepper.  Holy batman!  This was spicy but so flavorful and yummy!  Plus it was only $3.50/lb.  Pretty inexpensive.

Another good recipe from the week, this sweet potato mac n’ cheese that was sweet and spicy.  I made it using canned sweet potatoes, chopped jalapenos, some more of that jalapeno chili powder, almond milk and a mix of cheddar and pepper jack cheeses.  I also added in some spicy cooked chorizo because it is one of the hubs’ favorites.  I think he is going to feel quite sad when my food focus is not all about him anymore! 🙂

Also over the weekend we visited the Chobani SoHo cafe.  I tried their seasonal creation and was so excited to make it myself at home!

It’s so easy to make: plain Chobani, heated up pumpkin puree, dried cranberries, chopped up pecans, maple syrup and crushed ginger snaps.

So good!







Still going.  I did Zumba this week.  Holy cow.  It’s hilarious.  I can barely move but it ended up being a good workout burning 300 calories in 35 minutes.  I was kind of just doing my own thing . . .

I posted a photo of myself doing one of my favorite workouts on Instagram (btw, can we be friends?), I received a nice comment that said “Congratulations on the twins.”  Haha.  There is definitely only one baby in here.  I guess I must look pretty huge!

I also started using my Bowflex Boost (affiliate link).  I received this about a year ago at a Bowflex event I attended but at the time I couldn’t use it because it wasn’t compatible with my phone (I has the 4, yes the 4 not the 4S, from 2010 and finally just upgraded to the 6).  I’m pretty excited to start tracking my movements and see how much I’m walking.  I normally walk a lot but I have a feeling it will be a little less to start out given my mobility is kind of limited these days.  Although Day 1 I smashed it with over 12,000 steps (that counted the Zumba)!
