Friday’s Food & Fitness: Roasted Red Pepper Hummus

Hi all! I can’t believe it is Friday again. I swear these weeks just fly by! The little man is like a black hole with time.
Welcome to this week’s Friday’s Food & Fitness! It is an epic one for sure!
I think I made the best chicken tikka masala ever. It was better than my favorite Indian takeout. While I can’t say it was the healthiest, it was delicious and so worth it!
I did, however, make an extremely healthy lunch this week with a batch of homemade roasted red pepper hummus. I couldn’t find any canned chickpeas so I had to cook the beans from scratch in my slow cooker. I think I could have cooked them a bit longer or used more water or something because the hummus had a much thicker texture than normal. It was still delish though!
And I’ve been rockin the overnight oats for breakky. In case you missed it, here are Overnight Oats Four Ways!
Pilates! I got my Spencer Mat certificate this week and I was all about Pilates on the ball!
I also headed to my weekly Pilates apparatus class. They put all the gringoes together in one room.
I’ve also been loving the Beachbody On Demand classes. I’m taking full advantage of my free trial!
My little helper likes to workout with me. I was doing this prone stretch and he started doing it at the same time as me! How funny is that?
And the MOST exciting workout this week? I taught my first Babies at the Barre™: Stroller Barre class! Woo hoo! My legs are still sore.

Most exciting workout – getting from Philly to Seattle solo with my 6 month old girl, wearing her through the airport, carrying my bag, and hauling around a diaper bag. That counts, right?

I Love hummus from scratch! It tastes so much better in my opinion. The key is to have good beans though. Mine were a bit tough to start because they needed to be cooked a bit longer!
There is definitely no excuse at all not to exercise! I like to do lunges, squats and calve raises holding on of the babies or if I’m not holding one of them, I’ll put them in their chairs and through in one of my DVDs and workout in front of them. They love to watch the movement and of course, I’ll also act like a goof ball to keep them entertained.

My most “exciting” workout this week 1.25 hours of yoga followed by 1 hour of a Zumba Latin party! Yep, I am sore.
I’ve cooked beans from scratch and it can be tricky. I so want that chicken tikka masala!

May 11, 2015I love spicy food too! I chopped up some hot thai chili and added it to the tikka masala to make it a bit spicer and it was so good!
