Throwback Thursday: Make Healthy Meals for the Week

I was actually totally looking for another post for today’s Throwback Thursday when I came across this gem! I made a live cooking demo video for you all way back in November before I had a baby (time is no longer in years only in pre- and post- baby). I thought it was a pretty valuable post so I’m bringing it back! And if you are linking up today, please scroll to the end and add your link. Recently I had the opportunity to attend an event with Urban Girl Squad featuring the Regal Vegan. The event inspired me to put together this post, How To Make Easy, Healthy Meals for the Whole Week.
Personally, I think it is really difficult to make a healthy meal every night of the week but with a little bit of prep, you can eat healthy every single night of the week. And for a special bonus round, I’ve thrown in some awesome, healthy lunch options for you too!
The key to prepping an entire week’s worth of healthy meals is to do as much as you can beforehand, which includes planning, shopping, chopping vegetables, cooking up some rice, grilling some chicken and getting everything ready so all you have to do is throw together a few things when you get home during the week. Even if you don’t have a lot of time to plan, buying some healthy staples and doing a little bit of prep on the weekend will give you options during the week.
Luckily I’ve done a lot of the leg work for you here and provided you with the meal plans, grocery list and recipes! Plus, I’m going to walk you through everything step by step in the video below. So let’s make a week of healthy meals!

oh geeze, i am SO not a meal prepper but often think i should start cooking more, or at least putting stuff together. we have a subsidized caf at work, so it’s just so easy to buy lunch here (and i don’t have to worry about produce going bad in my fridge!), and i can buy fruit so inexpensively on the street, so that’s generally my breakfast. i spend more money on lattes than meals sometimes. whoops. 🙂

July 30, 2015These are great tips! I have to get in the habit of making sure I buy ingredients that I can use across breakfast/lunch/dinner so nothing goes bad.
