Hi all! It’s Friday! I seriously don’t know where my week went! They often say that with babies the days are long but the years are short. I have to say that my days go by with a snap of the finger and somehow this kid is already nine months old. I can’t even talk about it.
Well, that being said, Friday means Friday’s Food & Fitness! Welcome along.
I’ve been on such a kick making all kinds of yummy foods lately. So, unless you live under a rock, you’ve probably heard of zoodles right? I mean zucchini noodles. Basically you use a spiralizer to create long spaghetti-like strips of zucchini, which you then use in place of spaghetti noodles: zucchini + noodles= zoodles.
Well, I couldn’t really justify yet another appliance in my kitchen, especially one that basically has one purpose but I also didn’t want to give up on the idea of zoodles. So, naturally, I created my own dish. Meet zenne: zucchini + penne= zenne. Zenne is created by using your handy dandy cheese grater and grating fine short thin pieces of zucchini that sort of resemble penne noodles.
I made Zenne with Chicken Parm last week and it was so delicious. I definitely recommend giving this low-carb (I LOVE carbs, but you know, something different), high veggie count dish a try.
Another fun creation recently was this Chocolate Almond Avocado Smoothie. I got the idea to create something with chocolate almond milk after seeing a chocolate smoothie on my friend Nicole’s blog. The only problem was that I didn’t have all the ingredients on hand.
So instead, I came up with this little gem based on what was in my pantry:
It was super creamy, frothy, chocolatey and down right delicioso!
Other good eats include this avocado chicken salad: lettuce, grilled chicken and avocado dressing were a sensational combo.
And some yummy fish tacos with pineapple pico de gallo and a side of crunchy homemade coleslaw for the win.

August 28, 2015Wow, your Barre and Pilates challenge looks awesome! All of your food looks fantastic too. I haven’t made Chicken Parm in forever; now I want to! I also love zoodles, but I don’t have a specific appliance to make them either. I just use my julienne peeler and it seems to work well! That smoothie looks oh so yummy too!

I’ve been loving zoodles majorly this summer. I just have the little hand spiralizer, though when my hand is hurting from all of the spiralizer, I wish I had a fancier stand gadget!
