Beet, Kale and Goat Cheese Pasta

Hi all!  Have I got a great one for you today!  I went shopping to a local food purveyor recently and was so inspired by all the fresh ingredients there.  One thing that caught my eye was this beet pasta.  I’ve never tried pasta made with beets before so I knew I had to pick it up and give it a try.  Then the question became, what to make . . . Along came Beet, Kale and Goat Cheese Pasta.

I put together this recipe fairly quickly and it is packed with healthy ingredients.  Here’s the lowdown on this intensely nutritious meal:

Kale is packed with 

  • beta carotene
  • vitamin K
  • vitamin C
  • calcium
  • sulforaphane, which is a potent anti-cancer chemical
  • indole-3-carbinol, which boosts DNA repair in cells and blocks the growth of cancer cells
  • resins that have been shown to lower cholesterol and decrease absorption of dietary fat


  • are an excellent source of folate and manganese
  • contain vitamin C, fiber and potassium
  • contain phytonutrients, which may help in treating cancer
  • contain betaine, which helps reduce inflammation

    This recipe sounds so healthy! It’s funny that you’re posting something about beet pasta, because my mom was just telling me that she tried bean pasta and loved it. I was like ooooh I need to find that!!
