Hello hello! It’s the end of the week, which can only mean one thing: Friday’s Food & Fitness! This week I’m traveling around the world plus giving you some tunes I groove to. I hope you enjoy this week’s roundup and I’ll see you on the flip side!
The theme of this week’s meals was Around the World. I hauled out my trusty blackboard for meal planning and was quite pleased to see the arrange of eclectic cuisines!
First stop was India with this classic chicken tikka masala dish.
I served up this one with Indian basamati rice (cooked with cloves, cardamom and cumin), garlic naan bread and this cauliflower. The cauliflower really stole the show. All I did was toss the cauliflower with tumeric, salt, pepper and olive oil and roast in the oven until tender (about 25 minutes). It was amazing!
Then we moved on to Italy with this gorgeous vegetarian pizza.
After our stop in Italy, we headed south of the border to Mexico for these amazing Slow Cooker Chicken Tacos!
Man were these babies good and so easy to make! I used small corn tortillas so I felt like I could have a million of these things since I could only put a small amount of filling in each one.
And finally, we made our way to the South Pacific with this Green Thai Shrimp Curry and Rice Paper Wraps. The wraps were so easy: just sliced mint, mango, radish, carrots and avocado all wrapped in rice paper and served with sweet chilli sauce. Healthy and delicious!
I’ve been really getting into pilates a lot lately and one thing that I don’t think most pilates studios focus enough on is the music. Music is such a huge motivator for me but I can honestly say I’ve never left a pilates class thinking “wow, that music really helped me push through”. I feel like maybe instructors think it is a throw away for that type of class? Anyways, I put together a playlist that I personally love for pilates!
