Hello hello! It’s Friday! Do you have any exciting Halloween plans? We attended a Halloween party earlier this week for the little guy. It was so adorable! All the kids dressed up in their outfits.
Cooper was a tiger! I decided to dress him as a tiger because the Hubs being Australian loves the rugby and his home team is the tigers. When I saw this costume, I knew it was a homerun!
I didn’t end up cooking that much this week because the Hubs was away. Essentially cook once and eat all week! Not a bad thing though as it saved me a ton of time and I have two awesome, healthy recipes to share with you today!
The first one is this chicken and broccoli stir fry. It is restaurant take-out quality minus the grease! Next time you feel an urge to order in Chinese, try this recipe instead. It’s quick and delicious. Plus, the addition of sriracha gives it a hidden kick!
Lunch this week consisted of this amazing salad: Kale Salad with Apple, Walnuts and Pomegranates.
This salad is the perfect blend of fall flavors and packs a healthy antioxidant punch. I made a homemade dressing that combined sweet and tangy balancing out the flavors of the salad.
This week was pretty stellar with workouts. I’ve been on a huge pilates kick and in between teaching my own mat classes, and making resistance band and advanced workouts for you guys, I also started up at a pilates studio with an equipment class!
I never really did pilates equipment classes until recently and they are so hard! The equipment really adds a lot of resistance. Plus, maintaining good posture and stretching through the movements is also really hard.

I totally agree. I think I was put off from them for some reason, maybe because of shinier newer workouts? But I recently started doing them and think they are amazing!
Awww, I love the tiger costume! I get a kick out of babies, toddlers & puppies dressed up in Halloween costumes… it’s just too much cuteness! I’m anxious to get some pics of my nephews all dressed up tomorrow.
I’ ll take the Sesame Chicken Stir Fry-anytime! I admire your form in Pilates (especially your straight back)–all the time! And, I just love your Little Tiger with the tiger-pacifier–for all time!
