Hello hello! It’s that time again! Friday’s Food & Fitness is here. Tell me the best thing you ate this week and I’ll tell you mine! Join me for a fun rundown of the week and something special for you!
Do you ever have one of those weeks and have no idea what you ate? That was my week! I know there was food involved but what food is a mystery to me.
Let’s see, the warm kale salad recipe from Iowa Girl Eats was a hit for lunch. I finally found some American style bacon. You would think that bacon would be one of those items that resonates world wide, but it is truly difficult to find American style bacon outside the US. I’ve seen the thick, Canadian bacon that is like ham and then I’ve seen the really really thick bacon, which I’m not so much a fan of but thin bacon is apparently a unique concept?
I also made this amazing Indian curry with chicken, rice and cauliflower. It was a Goan Curry and it was amazing! So in case you are not well versed in Indian food, it is not a one size fits all kind of thing. Cuisines vary throughout the different regions and in this case, a Goan curry comes from, you guessed it, the Goan region, which is known for its tropical beaches and rich fish curries. I made this one with chicken but hot diggity dog it was AMAZE! With flavors of coconut, ginger and tamarind along with an undercurrent of spice, this is quickly going to surpass chicken tikka masala as my favorite curry!

I’m back at tennis lessons! Woo hoo! My instructor speaks Portuguese and Spanish. I speak English and very bad Portuguese. Needless to say the lesson is interesting! Haha. Seriously, I actually learned a lot despite only being able to understand about half of what he was saying. The power of sign language people!
My second week of pilates equipment class and I’m loving it. It is so much more challenging than I could have anticipated having really only taken mat classes before. Plus, the focus on posture is amazing. I like to think I have pretty good posture, but this takes it to a whole new level. Speaking of posture, has anyone tried out my 8 Weeks to a Dancer’s Body? Let me know how it is going!!

I think that’s so great you’re taking tennis lessons, but that’s so crazy your instructor doesn’t speak English! Fun. 😉
