This vegetarian pho recipe is the perfect twist on the classic chicken noodle soup. It’s good for your soul, can clear up any cold and has a nice spicy kick!
Hello hello and happy Friday to you! How was your first week of January? Did you hit it out of the park or are you ready to throw in the towel? If it’s the latter, don’t yet!! It’s only week 1! Jump back on the bandwagon, I promise it will be worth it.
We’ve had some really nice weather all this week. I’ve taken the little guy out for several walks in the park, a few swims in the pool and we even met the Hubs for lunch one day! We also started watching Making of a Murderer. Anyone else watching? What do you think? We are on about episode 4 and I’m so torn. One minute, I think guilty and the next, I think, maybe not…. No spoilers please! But holy cow, the first episode where he is in jail for 18 years. Outrageous!
Anywho, welcome to Friday’s Food & Fitness! It’ll be a good one, I promise.
Let’s just jump right in with this Vegetarian Pho recipe. I honestly wasn’t sure how it was going to turn out. I was a little nervous because for me, Asian dishes can either go really really good or really really bad. I had sushi on stand by just in case but turns out we didn’t need it because the verdict was I hit it out of the park! I told you bowls were big in 2016!
This Vegetarian Pho recipe is actually pretty easy to make and you can dress it up any which was you want adding in extra veggies, tofu or whatever. And, hey, if you aren’t into the whole veg thing, add some chicken! And since I like my food nice and spicy, I added in a kick with some red chiles and sriracha but if you prefer your food milder, skip both of those (hoisin sauce is a nice substitute).

I’ve been making a real effort to get out and be more active not just with my workouts. Like I said, walking with the little guy, swimming in the pool and just generally trying to move instead of sitting around! I’ve been using my Apple Watch to track my activity and it gives me a pretty good indication of what I’ve been up to!

January 10, 2016What a tasty way to make broth in the Vegetarian Pho recipe! I like kinda-spicy now and then. I would like the Vegetarian Pho if someone else made it besides me.
I am not watching Making of a Murder and I probably should be watching it. It sounds dark and surprising like many shows I like i.e. Breaking Bad, The Americans, The Bridge, Spotless, etc. Keep the good work coming!

January 14, 2016It is a docuseries so it is all based on true facts, real footage etc. It isn’t dark so much as outrageous that something like that could happen. It is interesting.

I actually just watched the first episode of Making a Murderer last weekend! I’m kind of obsessed with murder mystery shows, so I had seen the story about this guy on another show before called Death Row Stories… and it’s a shocker. I definitely want to watch the rest of the Making a Murderer series to see it from the whole perspective of innocence.
