Hello and happy Friday! I’m giving myself a virtual high five for this post being published because I’m currently on a mini-cation and not blogging so to get this done in advance was mind-blowing (truly). Ok, now that I’ve sufficiently honked my own horn . . .
Welcome to Friday’s Food & Fitness. Pizza-dillas. Oh yes, you are going to want to stick around for this one!
So, the current issue of Cooking Light is kind of blowing my mind. I had two issues that I thought were so-so but this one is fantastic! And I came across the recipe for Pizza-dillas and almost died. I knew I had to recreate!
Basically, this is a recipe for a quesdilla pizza. The method is Mexican, the food is Italian and it all melts in your mouth.
I served these with panko-crusted eggplant for a little extra veggie power. Side note–the baby LOVED the pizza-dillas.
I feel like I’m a bit on a creative roll at the moment. With the Pilates Apparatus Fakeout: Pilates Chair class starting the week, I moved on to a new barre class using the big stability ball for the first time and it was amazing!
This looks ways easier than it is!

Those pizza-dillas sound awesome ! I’m always looking for easy options. I think I’ll have to try the eggplant as well – I pretty much love panto- crusted anything, but I haven’t tried it with eggplant before!
