Friday’s Food & Fitness: Some Baking

Hello and happy Friday!!  Are you excited for the weekend?  We’ve hit a bit of a cold snap here and I’m not sure the weekend will give us the best weather but I’ve got my fingers crossed. What are your plans?

This week I was a crazy baker lady.  I hosted playgroup for a few kiddos and I wanted to have some things on hand for moms and kids alike, so I broke out my KitchenAid mixer, got a few recipes from online and got to work.  

I’ve stated before that I’m not huge on baking.  I am great at cooking but baking is a whole different story.  But I have to say, I think these came out pretty great AND I enjoyed it!  It’s kind of soothing.  I’ve heard people say that before and I totally thought they were crazy but now I get it.

I made some delicious zucchini bread for the adults (recipe here).

And carrot mini muffins for the kids (recipe here).  Despite what they said online about kids loving this recipe, the kids didn’t.  They ate a little but kind of just spit them out.  I think they liked holding the mini muffins more than eating them.  I sampled them though and thought they were great!

I did a pretty good job of getting down to the gym when we were away for our long weekend but I found it a little bit harder getting back!  With several interruptions this week, being tired from our flight and just generally trying to get back in the swing of things, a few of my workouts could have used a little more fire power.

But there is always teaching and that keeps me honest!  Plus, I filmed a new video this week…coming soon!

    Oh yes, I love baking! I totally find it soothing and relaxing. When I’m baking coming up with new recipes, I also like that it allows me to be creative. Zucchini bread – yum! I need to make that sometime soon.

    I want the banana bread and the carrot mini muffins-now! I love to bake, I love to eat. Not a great combo sometimes 🙂 Or, a GREAT combo! I will try the carrot mini muffin recipe. Looking forward to the new video!
