Friday’s Food & Fitness: A Barre Challenge + Southwest “Salad”

Hello from Florida! After a looooonng night on the plane where Cooper woke up constantly and decided around 2am that he was up for the day, we’ve made it to Florida! Despite some erratic weather, we are excited for warm weather and beach time. But, in the meantime, welcome to Friday’s Food & Fitness!
I’ve been on a bit of a salad kick lately so I’ve been trying out all different salad combos. Although this one can’t really be defined strictly as a salad because it is rice based instead of lettuce based but it is super delicious. It has a Southwest vibe to it without being over the top.
The base is brown rice and black beans with a little chile seasoning topped with cherry tomatoes, avocado and spicy red jalapenos. I then used a spicy habanero salsa for the dressing. I am a gluten for spicy but you could totally use something a bit more mild.
I also had a delicious salad of spinach, raspberries, pine nuts, gruyere and plums but the photo didn’t make the cut. Try it! It is delicious!
Fitness
My workout schedule looks a little like this: dance cardio, barre, pilates, repeat. I love it!
My pilates instructor filmed this fun video this week during my reformer class! It looks way more graceful than it felt!
