Hello and Happy Friday! I’m coming to you from none other than the Big Apple today! I hate to leave the beach in the summer but I think we are going to get some rain this weekend so I feel pretty ok about it. What are you up to?
Welcome to Friday’s Food & Fitness! Ceviche was had and it was amazing, plus I have a fun challenge for you!
Salad for the win this week. This Watermelon Chicken Salad was featured in a recent Cooking Light and I was drooling from the moment I saw it.
A simple combination of baby spinach, watermelon slices, sliced almonds, chopped red onion, fresh mint leaves and shredded rotisserie chicken made this an easy salad to throw together for lunch.
I topped it with my favorite Blush Wine vinaigrette dressing for a light but satisfying midday meal!
Last summer I hosted the Find Your Flexibility Instagram Challenge and I’m bringing it back this year with Find Your Flexibility 2! Each day for the month of July (yes, we’ve already started but there is still time to catch up!), I’m posting a pose that will help you stretch and improve your flexibility. It is something we don’t often focus on but it is really important and it can actually help you a lot in your other workouts! It can help prevent soreness, increase your range of motion and can also help prevent injury.

mmm that salad looks amazing! i had watermelon last weekend for the first time in a while as the boyfriend was craving it, and we ended up blending up part of it (with ice) and using it in sangria and smoothies — so good!
What a great workout!! And don’t you just love watermelon in a salad?? Seriously, so magical and fresh!! Thanks for the recipe babe! I def need to try it with slivered almonds! Such a great crunch!

I like crunchy green Romaine so a Cessar with a light lemon dressing is always a fav! I’m looking forward to #findyourflexibiluty number 2. You always make the poses look effortless so i believe I can do them all well!
