Friday’s Food & Fitness: Delicious Eats + A New Workout

Hello and happy Friday! We’ve had a week of beautiful weather here and I’m hoping it will hold up for the weekend. Yesterday I took Cooper to a farm and he absolutely loved it. I’ll give you guys more info next week! What are you up to this weekend?
Welcome to Friday’s Food & Fitness! Two new recipes plus a new workout, woo hoo!
I’m just loving the summer produce! Everything is so fresh and it inspires me in my meals so much. This week I did a gazpacho and a peach flatbread, both adapted from Cooking Light.
So the secret to a great gazpacho is to soak some bread pieces for about ten minutes and then blend the soaked bread in with your veggies. It creates a thicker consistency and you get a great soup taste instead of just blended up vegetables. I’m totally hooked on this method!
The real winner of this combo though was the peach flatbread. Oh my delicious! It was so amazing. It is always a challenge to find ripe peaches and you really need them for this recipe so I would plan this recipe well in advance and then purchase the peaches so they have time to ripen up.
After my epic week of fitness last week, I feel like this week is a little anti-climatic, but I actually had a great week!
I created a mini trampoline dance cardio workout, you can check out the video on my online studio!
I honestly had so much fun creating this workout! It was like a little dance on the trampoline but without too much choreography.

all i can say is YUM. that flatbread and gazpacho combo looks delicious!
my fitness week was pretty good — i’m marathon training so it consisted entirely of running, as i was too exhausted this morning to get up and do any strength/abs (whoops). i have a long run in the books for tomorrow so i figured i needed the rest, esp bc it’s supposed to be so hot this weekend here!
The trampoline is such a great suggestion to get in a workout because it is fun to bounce on a mini! That you paired it with dance moves is quite creative. I already tried it out and I think it is a “keeper!” Hence, a good fitness week for me! The peach flatbread and gazpacho would be a nice al fresco dinner.
