Friday’s Food & Fitness: Ten Minutes is All it Takes

Hello and happy Friday! I hope you had a great week. The little guy and I went swimming a few times in the pool this week. He is so hilarious! He loves jumping in and having me catch him but he acts really casual about it like he is trying to fake me out and then all of a sudden jumps. So so funny.
Welcome to Friday’s Food & Fitness. Short on time today? No problem! All you need is 10 minutes!
Ten minutes is all you need to throw together this healthy lunch salad and I promise you will love it!
Start with a base of your favorite greens such as romaine, baby spinach, kale or anything else that tickles your fancy. Add in the good stuff–one diced peach, a handful of blueberries, a handful of walnuts and some cubed cheddar. Top with some fresh mint and serve with balsamic vinegar of your choosing. Voila. Simple, fast and healthy!
