Watermelon Salad

Watermelon Chicken Salad

This mouthwatering watermelon salad is a tasty lunch treat.  A mix of protein, fruits and veggies–you couldn’t ask for a better combo!  Watermelon has vitamins A, B6 and C as well as lycopene, antioxidants and amino acids.

Raspberry Salad

You can tell I’m a fan of fruit in my salad!  This one packs a punch with chicken, nuts and raspberries.  The blue cheese toasts on the side are a decadent indulgence, totally deserved after this salad.  Raspberries clock in with a high dose of antioxidants such as vitamin C, quercetin, gallic acid and ellagic acid.  These properties help you fight cancer, age-decline, heart and circulatory disease and assist in anti-inflammation.

Plum and Blueberry Salad

There are veggie salads coming, I promise!  Blueberries, plums, nuts and a bit of cheese make this salad an all-around hit!  Blueberries are another fruit high in antioxidants as well as fiber, potassium, folate, vitamin C and vitamin B6.  While plums help the absorption of iron in your diet!

Goat Cheese and Fig Salad

Mediterranean Quinoa Salad

This salad even sounds healthy!  The Mediterranean Diet has been hailed as a gold-standard diet while we know quinoa is a nutritional superfood!  Quinoa is naturally gluten-free, contains iron, B-vitamins, magnesium, phosphorus, potassium, calcium, vitamin E and fiber.  It is also considered a complete protein with all nine essential amino acids!  Plus, veggies!  Yay!  This salad has a ton of yummy and healthy veggies.
