Hello! I’m super excited to share with you this amazing recipe today. This Pomegranate and Raspberry Kale Salad is simple and totally delicious. Make it for lunch today! The recipe comes from my 30 Day Clean Eating Guide, available at hiitthebarre.com. It is part of my HIIT the Barre program and I absolutely love how good it tastes as well as how good it is for you!
This recipe is super simple to put together and so delicious. You only need a few ingredients but I promise you will love it!
1 head of Lacinato kale
1 pint of raspberries
1 pint of pomegranate seeds
1 red onion, thinly sliced
1 tsp olive oil
1 tsp of red wine vinegar
2 oz of cheddar cheese
1 tbsp of sliced almonds
1 tbsp of olive oil
1 tbsp of balsamic vinegar
salt & pepper to taste
Wash and dry kale and tear into small pieces. Place kale in a large bowl. In a small skillet, swirl olive oil and heat over medium heat. Add onions to the pan and cook until they start to brown. Add red wine vinegar to the onions and allow onions to caramelize. Add onions to kale and toss to combine. Add in raspberries, pomegranate, almonds and cheese. Toss everything to combine. Combine olive oil and balsamic vinegar in a small bowl and whisk to combine. Add salt and pepper as desired and whisk again. Drizzle dressing over salad and then divide salad between two bowls. Enjoy!

I am excited to take classes with Brittany in person this summer! I have followed Brittany online for some time. I particularly like the Barre and Pilates workout videos. Her workout techniques reflect current thinking and best practices. She supports all levels of fitness. Definitely worth a try!
