There is nothing I love more in the summer than all the fresh produce. The tomatoes, fresh corn on the cob, blueberries, peaches and, of course, strawberries are so mouthwatering that I can’t help but want to create amazing recipes. Recently we spent a family day strawberry picking. We ended up with the most gorgeous strawberries. 3 bushels to be exact. A few more strawberries than we could all consume.
So it was time to get creative and incorporate more strawberries into our meals. These three recipes are some of my all-time favorite strawberry recipes and they are a little more creative than throwing the strawberries into a juice or a smoothie or a bowl of cereal!
This recipe is so incredibly easy yet so delicious. It is a great summery twist on your boring old lunch salad. Use your favorite greens (I like butter lettuce for this recipe) and just add sliced strawberries. Top with sliced red onion, cooked chicken breast, walnuts and goat cheese. I like a nice blush wine dressing to top it all off!
Start with a pre-baked flatbread crust. In a bowl combine sliced strawberries with spinach, 1/2 teaspoon of olive oil and 1/2 teaspoon of lemon juice, salt and pepper. Sprinkle goat cheese on the pizza crust. Bake the pizza crust for about 2-3 minutes allowing the goat cheese to melt a bit. Then top the pizza with the strawberry mixture and enjoy!
This gazpacho is seriously amazing! I could eat it every single day. I can’t claim the recipe but I did find it in Cooking Light and you so have to make it. The best thing is that you don’t even need to turn on the oven on a hot summer night! Check it out here.
