Greek Chicken Bowl

Greek Chicken Bowl

This Greek Chicken Bowl feels fresh and light but is still delicious!  It will transport you to the Greek Isles.  Grab the fresh produce and whip it up.  You can bring it with you to school or work or you can enjoy at home!


1/2 package of 90 second brown rice

1 whole wheat pita

1/3 cup of chickpeas

1/2 cucumber, chopped

1/2 pint of cherry tomatoes, chopped

1/2 red onion, diced

1 cooked chicken breast, diced or shredded

1 tablespoon of feta

2 tablespoons packaged tzatziki 

Olive Oil spray

Salt & Pepper to taste


  1. Preheat broiler to high.
  2. Cut pita into 8 rounds.  Spray with olive oil spray and sprinkle with salt.  Broil for 2-3 minutes or until lightly browned.
  3. Cook rice according to package directions.
  4.  Place rice into bowl.  Top with chicken, cucumber, tomatoes, onion, chickpeas and feta.  Top with tzatziki to taste. Serve with pita chips.  Enjoy!
