For me, summer means pretty much one thing. . . strawberries! I love those sweet, juicy red fruits! We make a point to go strawberry picking every year because it is not only a lot of fun, but also encourages the small child (and the adults!) to eat more fruit! I love putting together a ton of recipes with the amazing bounty we end up taking home. Here are my Best Strawberry Recipes!
Obviously when faced with this many strawberries, the need to get creative becomes very immediate!
The simplest recipe but obviously the most important as it deals with the most important meal of the day! This whole wheat bagel is topped with honey pecan cream cheese on one side and berry cream cheese on the other. I like to use “light” or “whipped” cream cheese because it generally has less fat and calories. Topped with fresh sliced strawberries et voila, breakfast is served!
I looooove this kale and strawberry salad so much! It is packed full of delicious nutrients. I used a base of kale and romaine for some nice dark leafy goodness. Then I topped it with plain grilled chicken, sliced strawberries, blue cheese and toasted pecans. I used a bit of paprika on the pecans and then toasted them in a dry skillet. I recommend a fruity dressing or a balsamic vinegar.
Pistachio, goat cheese and strawberry pizza! Original, innovative and totally yum! I used a naan crust because they are so easy and are already baked. I baked the naan bread topped with goat cheese for about 7 minutes or until the cheese was melty. Meanwhile I combined the sliced strawberries with power greens mix (kale, spinach and chard) with 1/2 teaspoon each of olive oil and lemon juice and a pinch of salt and tossed to combine. You could use a different lettuce mix if you can’t find power greens such as each one individually or arugula or watercress. Once the pizza is ready, take it out of the oven and spread the strawberry mixture on top then sprinkle with shredded parmesan and unsalted, shelled, chopped pistachios.
This meal is so simple but so tasty. Grilled chicken is spiced up with a strawberry salsa. The salsa is simple, just chopped strawberries, diced avocado, seeded and minced jalapeno, lime juice and a bit of salt. Simple and delicious.
This salad makes an easy lunch. I used my power greens mix and topped it with sliced strawberries, goat cheese and pistachios. I topped it with a simple dressing of balsamic vinegar. You could add grilled chicken to this to give the salad a bit more oomph!
Strawberry gazpacho is probably one of my most favorite twists on gazpacho ever. Start off with 1 medium tomato, 1/2 seedless cucumber and 1/2 red pepper all seeded and chopped. Blend them together in a food processor or blender. Transfer to a bowl. Next, add 1 lb of halved strawberries to the blender or processor and blend until smooth. Add all but 1 cup of the strawberries to the bowl with the vegetables and leave the remaining 1 cup in the blender or processor. Add 1 garlic clove chopped and 1/2 teaspoon of fresh thyme chopped to the remaining strawberries and blend until smooth. Add to the bowl. Stir in the the bowl 3 tablespoons of EVOO, 1 tablespoon of balsamic vinegar, 1/2 cup of vegetable broth and salt and pepper to taste. Chill then serve.
