This healthy peppermint mocha recipe will have you tasting the holidays without the added indulgence!
As soon as the end of August hits people start going crazy for Pumpkin Spice Latte. While I enjoy a nice pumpkin flavored beverage, my real craving starts the day after Thanksgiving, when I deem it is time for holiday drinks! One of my absolute favorites is a peppermint mocha. But I recently saw just how many calories were included in my favorite drink when I ordered one earlier this week. While I am totally fine with this occasional splurge, I know that I can’t stop at just one. With that in mind, I knew it was time to come up with a healthy peppermint mocha.
I quickly whipped up this jem in my kitchen with just a few ingredients.
Ingredients
2/3 cup strong coffee or espresso if you have an espresso machine
2/3 cup of almond milk or other non-dairy substitute (you can totally use milk if you would like, almond milk just cuts down on the overall calorie count)
1-2 drops of peppermint extract
1 tbsp unsweetened cocoa powder
Stevia to taste
Directions
Brew the coffee according to directions. Warm the almond milk in the microwave or on the stove top being careful not to let it boil. Bring it to a simmer and then remove from heat. Combine the coffee with the almond milk.
Add in the cocoa powder, peppermint extract and stevia. Mix well.
Add any toppings like candy cane shavings or mini marshmallows or Cool Whip as desired.
