My Totally Healthy & Delicious Tacos

Oh hello.  Fancy meeting you here.  Well, today being another beautiful, sunny, hot summer day I started dreaming of some mouthwatering, lip smacking, totally satisfying Mexican food.  The only problem is that Mexican is often layered with oodles of cheese and oil making otherwise healthy ingredients not so healthy.  Well, I decided to take matters into my own hands and whip up something delicious yet light for your waistline.  Keep reading for my totally healthy and delicious (and completely satisfying) Fish Tacos with White Nectarine Pico De Gallo.


I started out with a nice Tilapia fillet.  It had beautiful, glistening flesh indicating it was nice and fresh.

I spiced it up with some Chipotle Chili Seasoning to add that extra punch of flava.  This stuff is so good  I’m telling you, you gotta try it.  Its so much richer and smokier than regular chili powder!

I then threw the fish on a skillet and cooked over medium heat until it was done (about 8 minutes).

Next came the veggies for my White Nectarine Pico De Gallo.

I started by dicing two tomatoes.

I then finely chopped part of a red onion.


And some fresh jalapeno.

Then I added my (not so) secret ingredient, white nectarine.  These babies are so juicy and  sweet this time of year.  Plus they put ’em right at the entrance of the grocery store.  I mean , how am I supposed to resist that?

I chopped up some cilantro.

Then I added all the veggies into a bowl and mixed to create a lil’ pico de fiesta!

To finish it off, I added in the juice of one lime.

Some EVOO and some minced garlic and salt.

To round out the meal, I made one of my favs- guacamole.  Its just so simple.  Two avocados plus some guac spice and voila, instant guacamole.

And as easy as that it was time to fill up the tortillas and eat!

Totally. Seriously. Awesome.  Really, these were fast, easy and super healthy.  Mexican doesn’t have to be super unhealthy.  There are so many great flavors and dishes you can make that don’t require oodles of cheese and oil to make them good!
