Happy Monday all! Hope you enjoyed my review yesterday of Ellie Krieger’s So Easy. I thought I would give you a little preview of the book and provide you with a few of the So Easy recipes that I made and also modified a bit to make them easier for me. I have for you today Cinnamon Raisin Toast with Honey Walnut Spread, Beef Taco Salad. Let me know how you like them!
2.) Spread Greek yogurt on toast. Sprinkle walnuts on top of toast. Drizzle with honey and top with fruit slices. Enjoy!
Start Right Smoothie
1 ripe banana, sliced
6 frozen strawberries
2 cups of fat free milk
1/4 cup of unsalted almonds
2 tablespoons of honey
1/2 teaspoon vanilla extract
1 cup of ice
1.) Place all ingredients in blender and blend until smooth. Enjoy!
Beef Taco Salad
1 package of lean ground sirloin (90% lean)
1 14 oz can of low-sodium black beans
2 gloves of garlic, minced
1/3 cup of water
1 tablespoon of chili powder (I used a combination of chili powder and chipotle chili powder)
1/4 teaspoon cayenne pepper
1 pint of cherry tomatoes, quartered
2 tablespoons of EVOO
2 tablespoons of lime juice
1/2 teaspoon of salt
1 head of romaine lettuce
1/2 cup grated cheese (I used pepper jack)
2 oz of baked tortilla chips
1.) In a large skillet, spray cooking spray and cook meat until no longer pink, breaking up pieces. Add the beans and garlic and cook for 2 more minutes. Add the water, chili powder and cayenne pepper. Stir until combined. Remove from heat and allow to cool.
2.) In a medium bowl, combine tomatoes, EVOO, lime juice and salt. Stir to combine.
3.) Place lettuce on plates and top with cheese, meat, tomatoes and crunched up tortilla chips. Enjoy!
