Hey there! So it’s back to work as usual but a shorter week is nothing to complain about! Not to mention that the weather should be brightening up a bit. The hubs headed back to Mexico for work after our long drive back from the Cape. Yikes! That man defines frequent flyers! I promised in my post on my Memorial Day Weekend Recap (check it out if you missed it and are looking for some fun and healthy activities to do this weekend!) that I would divulge my Memorial Day Recipes for you today. These recipes use a ton of fresh produce (we only shopped the perimeters of the grocery store) and are full of healthy stuff like vitamins, nutrients, antioxidiants, etc. I highly recommend you getting your grill out next weekend and trying these recipes out! So without further adieu, here are my Healthy Grill Recipes!

Salmon with Peach Salsa
(Serves 4)
Ingredients
4 salmon fillets (I recommend springing for the best salmon you can buy, it will really make a difference taste-wise for this recipe)
1.5 tablespoons of olive oil
salt and pepper to taste
2 limes
3 Roma tomatoes, diced
1/4 red onion, diced
4-5 peaches (depending upon the size- the ones I used were very small), diced
1 garlic clove, minced
a few sprigs of cilantro, chopped
Directions
1.) Heat grill or grill pan. Season salmon with 1 tablespoon of olive oil, salt and pepper and the juice of 1 lime. Place salmon on grill or grill pan and grill until desired doneness.
2.) While salmon is cooking, combine diced tomatoes, onion and peaches in a medium bowl. Stir in minced garlic and chopped cilantro. Drizzle with 0.5 tablespoon of olive oil and the juice of 1 lime. Add salt if desired (I normally add salt to my salsas but I didn’t for this one and it seemed to work).
3.) Serve salsa over salmon and enjoy!
Potatoes with Tomato and Corn Saute
(Serves 4)
(Adapted from Cooking Light)
Ingredients
10 baby potatoes, quartered
1 pint of cherry tomatoes, halved
2 stalks of corn, kernels cut off
1 clove of garlic, sliced
1 tablespoon of olive oil
1/2 teaspoon red pepper flakes
salt to taste
Directions
1.) Place potatoes in saucepan and cover with water. Bring water to boil and cook for 10 minutes. Drain potatoes and set aside.
2.) Meanwhile, in a pan over medium heat, add olive oil, garlic, salt, red pepper and corn. Saute for 3 minutes. Add in potatoes and tomatoes and saute for 1 minute. Transfer to a platter and enjoy!
Tropical Angel Food Cake
Ingredients
1 pre-made angel food cake
1 fresh pineapple sliced into chunks (save any remaining pineapple for later in the week)
2 tablespoons of chopped walnuts
fat free whipped cream
Directions
1.) Top angel food cake with pineapple, nuts and whipped cream and enjoy! This one is too easy but so good!
