Hello friends! It’s been an extremely busy week but it’s been a good one! I want to hit the hay soon so let’s jump right in.
This post is sponsored by Blue Diamond Almonds. All opinions are my own.
The return of Plated! Timely given my Throwback post yesterday! We had this amazing chili fish with vermicelli noodles. It was so amazing!
I also received a really fun package from Blue Diamond this week. Sriracha almonds.
I have and undying love for sriracha and almonds so sriracha almonds are genius! They are so delicious on their own but I decided to experiment with s little snack recipe and I came up with Sriracha Guacamole.
All I did was put the almonds through the food processor and pulse them into a fine chop so they were almost powdered.
I then stirred them into mashed avocado and topped with a little sriracha. I wasn’t sure how this experiment was going to go but omg it was so good! The sriracha nuts had an awesome kick to them that flavored the avocado nicely and it was a great twist on the traditional guacamole flavors. Plus, it was packed with protein and healthy fats since it was nuts and avocado!
Definitely going to be making this one again. That is, if I can make my Blue Diamond sriracha almonds last!
It was a super exciting week in fitness!
I started teaching classes at the local YMCA. Pilates all the way baby!
AND…drumroll…Balance Barre Fitness opened its doors for the first time! I am so proud to say that this week’s classes went amazing with new students attending and lots of positive feedback. I’m so happy to call it a success and am super pumped for the rest of the summer!
Readers, what would you make with sriracha almonds? Anything exciting on your fitness calendars? What are your plans for the weekend?
A huge congrats on the studio opening successfully! I wish I could come in and take a class 🙂 That’s also exciting that you started teaching YMCA classes — you’re right, it was a big week for you in fitness!!
Also, I’m loving these sriracha almonds and making guac with them is genius!
I thought of you when I was coming up with this recipe. I was like…hmmm…what would Nicole do? I’m not super creative but this was simple and really yum!
