Hello and Happy Friday! I had some weirdness going on with the blog due to a plugin I installed this week. If you had trouble seeing my posts or seeing them in the right order, don’t fret, I’ve fixed the problem! Man, there are always so many tech issues when you have a blog. I feel like I should have earned a second degree in technology after running this blog for about 4.5 years!
Onto the good stuff today…what I have been earning a degree in (well, really a certificate) is nutrition. I’m so excited to share more of my knowledge with you and I hope there will be a lot of interesting posts to come. Building on my knowledge, this week had some really winners in the kitchen. These recipes looked delicious, tasted fabulous and were healthy to boot!
This salad is one of my all-time favorites–the perfect blend of fruity and light.
This simple recipe calls for a combination of baby spinach and romaine topped with grilled chicken, raspberries, strawberries, red onion, pecans and goat cheese. I love a good blush wine dressing to top it off!
This recipe looks super impressive but it is actually really easy to make! I recommend it if you have breakfast guests. All you need is 1/2 a pineapple per person. Slice the pineapple in half and scoop out the inside then chop up the flesh. Place the flesh in the bottom of the pineapple and then add in blackberries, sliced almonds, chopped mango and plain greek yogurt. Sprinkle with chia seeds and enjoy! You could also switch it up and add raspberries, blueberries, papaya, walnuts or pecans.
You can have pudding for breakfast if it is chia pudding! This recipe is a combination of almond milk, chia seeds, cacau powder, 2 teaspoons of vanilla and a dash of cinnamon. Top with almond butter and mixed berries. Yum!
