Ahh the holidays. It makes me want to whip out all of my favorite treats. My son recently made snowflake cookies and while they were delicious, man they were heavy. Hello butter.
If you are looking for a treat that is a little lighter but still very tasty then you need this Chocolate Cherry Quinoa Bark.
Ingredients
3 tbsp cooked quinoa (I like the 90 second quinoa in a bag!)
1/2 cup of dried cherries or cherry Craisins
1 bag of dark chocolate chips
1/4 of a cup of roasted pumpkin seeds
Directions
In a pan over medium heat, toast the cooked quinoa for about 5 minutes or until lightly browned. Stir frequently to avoid burning. Once the quinoa is toasted, remove from burner to a bowl and allow to cool.
Melt chocolate in a microwave safe bowl in 30 second intervals in the microwave until the chocolate is completely melted. Stir the chocolate in between intervals.
Once the chocolate is melted, combine the quinoa, pumpkin seeds and cherries with the chocolate and stir to combine.
Line a baking sheet with parchment paper. Spread the chocolate mixture onto the parchment paper and place baking sheet in the refrigerator to cool for 30 minutes. Once the chocolate has harden, remove from refrigerator and break into pieces. Enjoy!
